May is the perfect month to discover (and rediscover) rosé wine. Versatile, light, delicate in colour and irresistible for Instagram shots, rosé goes easily with fresh dishes, appetisers and aperitifs. But not all rosés are the same: behind that soft colour lie different winemaking techniques and surprising results in the glass.
How do you get the pink colour?
Rosé wine is mainly produced from red grapes, but with very brief contact between must and skins, which determines the intensity of the final colour. The most common techniques are:
- Short maceration: the must remains in contact with the skins for a few hours, then is separated to obtain lighter tones and delicate aromas.
- Direct racking (or bloodletting)part of the must from a red wine is allowed to 'bleed', resulting in a more structured wine.
- Assembly (rarer in Europe): small quantities of red and white wine are mixed, a practice permitted only for rosé sparkling wines.
The result? An infinite range of nuances, scents and styles.
