Grillodoro, It's much more than just wine: it's the embodiment of natural magic. As Tenuta Gorghi Tondi, we are proud to present the only botrytised wine produced in Sicily, obtained exclusively from our own organic Grillo grapes. The ideal climatic conditions, with the sea's humidity, the breeze that caresses our vineyards, and the autumn sun's rays, create the perfect environment for the development of Botrytis Cinerea, a noble mould that concentrates sugars and aromas, lending the wine extraordinary complexity. This natural process, carefully monitored on our estate, is the secret to its unmistakable personality.

Tasting Notes

  • Smell An almost mystical experience: the bright gold of the chalice anticipates rich and opulent aromas in which bitter orange marmalade is inextricably linked to saffron threads, beeswax and candied exotic fruits.
  • Taste: On the palate, it is a nectar with a velvety consistency. The initial sweetness of tropical fruit is immediately invigorated by an excellent freshness on the finish, making the sip long, balanced, and of aristocratic persistence.

Recommended Pairings

A true wine for contemplation. Perfect on its own after a meal to savour the moment, it excels alongside ricotta tarts, almond pastries and dark chocolate. It becomes superb when used to accompany, through a contrast of flavours, spicy blue cheeses. Best served chilled at 10-12 °C.

The Story of Wine: Grillodoro

The genesis of Grillodoro wasn't born from a table-top calculation, but from a visionary intuition and an unexpected miracle of nature. It all began in the early 2000s in one of the estate's historic vineyards, cultivated with Grillo and overlooking the Mediterranean Sea just a few metres away.
In late October, an unaccustomed eye would have seen only insidious mould on the remaining bunches on the vine, which needed to be quickly dealt with before winter. But the estate's winemaker, Tonino Guzzo, immediately realised he was facing an absolute and very rare Sicilian climatic anomaly: that grey veil was Botrytis cinerea, the famous “noble mould”. Guzzo, who had already witnessed this phenomenon years before, proposed a bold challenge to Michele Sala, the company's founder: not to save the harvest in the traditional way, but to go with nature to create an unprecedented late harvest wine. Michele Sala welcomed the idea with enthusiasm and, in the historic 2006 harvest, the first vintage of Grillodoro,.
From that day on, this label boasts an unrivalled record: it is the only mouldy wine produced in all of Sicily.
Its creation is an act of absolute devotion and patience. It is produced in extremely limited quantities and only in vintages where the peculiar microclimate of the vineyard – a perfect balance between sea humidity, constant ventilation, and dry autumn sun – allows *botrytis* to develop. Harvesting becomes a meticulous ritual, carried out in several passes between late October and early November, collecting very few bunches or meticulously selecting the grapes berry by berry.
