Grillodoro: the excellence of Sicilian noble rot wine

Grillodoro, It is much more than just a wine: it is natural magic. It is the only mould wine produced in Sicily, obtained exclusively from carefully selected organic Grillo grapes within the estate. The ideal climatic conditions, with the sea's humidity, the breeze that caresses the vineyards, and the autumn sun's rays, create the perfect environment for the development of Botrytis Cinerea, a noble mould that concentrates sugars and aromas, bestowing the wine with extraordinary complexity. This natural process, carefully monitored at the estate, is the secret to its unmistakable personality.

Tasting notes

  • Smell Luminous like amber gold, it releases an unforgettable and deep bouquet in which the intoxicating notes of orange marmalade blend their sweetness with hints of saffron, fine honey, and delicate candied fruit.
  • Taste: It is surprising for its composure and elegance. It is frank, rounded and enveloping, capable of masterfully balancing sweetness and freshness, thus providing a long finish that is never cloying.

Recommended pairings

A star player that requires considered pairings. It is sublime alongside fine dry pastries, almond- or ricotta-based desserts, and chocolate. For an exciting gastronomic experience, try it in contrast with blue cheeses, very mature cheeses, or foie gras pâté. Ideal temperature: 10-12 °C.

The Story of Wine: Grillodoro

The genesis of Grillodoro wasn't born from a table-top calculation, but from a visionary intuition and an unexpected miracle of nature. It all began in the early 2000s in one of the estate's historic vineyards, cultivated with Grillo and overlooking the Mediterranean Sea just a few metres away.

In late October, an unaccustomed eye would have seen only insidious mould on the remaining bunches on the vine, needing to be dealt with quickly before winter. But the estate's winemaker, Tonino Guzzo, immediately understood he was faced with an absolute and very rare Sicilian climatic anomaly: that veil Greenish era Botrytis cinerea, the famous “noble mould”. Guzzo, who had already witnessed this phenomenon years before, presented Michele Sala, the company's founder, with a bold challenge: not to save the harvest in a traditional way, but to go with nature's flow to create an unprecedented late harvest wine. Michele Sala enthusiastically embraced the idea, and in the historic 2006 harvest, the first vintage of Grillodoro came to life.

From that day, this label boasts an unparalleled record: it is the only mouldy wine produced in all of Sicily. constantly.

Its creation is an act of absolute devotion and patience. It is produced in extremely limited quantities and only in vintages where the peculiar microclimate of the vineyard – a perfect balance between sea humidity, constant ventilation, and the dry autumn sun – allows for the development of botrytis. The harvest becomes a painstaking ritual, carried out in multiple passes between late October and early November, collecting very few bunches or meticulously selecting the grapes, berry by berry.
