Carefully cultivated within the WWF Nature Reserve, Civolìa Biancolilla is an extra virgin organic olive oil of great finesse. A delicate and harmonious expression of the Sicilian terroir.
Thanks to its innate delicacy, this oil has the great merit of enhancing food without ever overpowering its original flavour. It is the ideal pairing for seafood salads, white fish tartare, delicate fresh cheeses (such as cow's milk ricotta) and sweet-flavoured vegetable veloutés. To be consumed raw and at room temperature to appreciate its micro-nuances.
Tenuta Gorghi Tondi has always been a diligent guardian of a vital and precious ecosystem, where vines coexist harmoniously with the Mediterranean maquis. Within and near the WWF Nature Reserve “Lago Preola and Gorghi Tondi,” nature expresses itself with an extraordinary pedoclimatic richness, described by the company itself as “more unique than rare.” It is precisely from the love for this unspoiled habitat and the deep desire to enhance its every agricultural gift that the Sala family decided to extract not only wine from their land, but also an organic extra virgin olive oil of the highest quality: this is how the Civolìa project came to life.
For the creation of Civolìa Biancolilla, the winery focused on an expression of absolute purity (monocultivar), choosing to enhance one of the most appreciated, historic, and widespread olive varieties in all of Sicily. The olive trees, cultivated under a rigorous organic regime at approximately 25 metres above sea level, breathe in the iodised sea breeze from the coast daily. From the meticulous manual harvesting, carried out in the second half of October, and the subsequent cold extraction by centrifugation, a bright green nectar takes shape. An oil with a delicate fruity flavour, capable of releasing unmistakable Mediterranean notes of artichoke, tomato, and almond onto the plate.
The prestige of this agricultural excellence is also magnificently celebrated by its visual presentation. The Civolìa Biancolilla bottle is in fact entirely embraced by a captivating geometric pattern that pays homage to the centuries-old tradition of Sicilian majolica tiles. In this specific variation, the mosaic is adorned with elegant and fresh shades of blue, turquoise, and green, embellished with gold, immediately evoking the colours reflected in the karst ponds of the Reserve and the ripples of the Mediterranean Sea. A contemporary design created to tell the story of the liquid beauty of the Sicilian landscape, right from the first glance.
It's the essential choice for the Food & Wine Lover who appreciates refined and balanced condiments. Produced from organically cultivated olives nestled between the sea and the Mediterranean scrub, cold extraction preserves all its nutraceutical properties. A concentrate of well-being and Sicilian elegance with a very short supply chain.
