Ziller 47 is not simply a wine, it is a profound declaration of love and a family tribute. This label, the winery's true pride and joy, is dedicated to Michele Sala, father of Annamaria and Clara and founder of the estate. The name encapsulates the very essence of the man: “Ziller” was the affectionate nickname with which friends highlighted his precise, meticulous, and stubborn character, while “47” celebrates his birth year, 1947.
The soul of this wine was born from an idea strongly desired by Michele himself: an ambitious project to return to the dawn of winemaking in the Trapani countryside. The Ziller 47 is, in fact, inspired by ancient versions pre-British, Born in an era when adding alcohol to wine for fortification was not yet the norm. This white wine breaks the mould and completes the cycle of the extraordinary versatility of the Grillo grape, demonstrating how it can achieve important natural alcohol levels capable of supporting very long ageing.
The creation of this authentic “liquid gold” requires an almost sacred wait and respect. It all begins in one of the company's most precious locations: a historic 40-year-old pergola vineyard nestled on the banks of the Gorgo Basso, in the most protected area of the WWF Nature Reserve. Here, the grapes are hand-picked and undergo a slight dehydration.
Subsequently, time becomes the true cellar master: the wine is aged in large French oak barrels where it rests, protected by a thin layer of Flower, for at least 11 years on noble lees. The result of this wisdom, passed down through generations, is an extraordinary sensory experience, an ancient flavour revisited in a contemporary key.
Choosing Kheirè means embracing the very essence of the biological and sustainable philosophy of the Gorghi Tondi Estate. Born from the best grapes of the estate overlooking the sea, It is a multi-award-winning wine from international wine critics., a guarantee of absolute artisanal quality. A wine that encapsulates not only the typicality of Grillo, but also the value of Sicilian welcome and pure hospitality.
